GU-Appleton Students offer a Fresh Approach to their Service Learning Project

Alisa DiSalvo’s Small Business Management researched and created a business expansion plan for Dalla Terra Pasta, LLC located in Appleton, Wisconsin. Cyndi Connolly is the owner. Dalla Terra makes fresh pastas on a daily basis, which are always sold within two weeks. Dalla Terra focuses on using local produce and grains whenever possible.

The business plan focused on strategic partnerships, markets, and relevant SWOT for entering the Milwaukee, Wisconsin marketplace.  In place of a traditional financial plan, students provided grant options, mileage cost for locations for expansion, and mentorship opportunities for a small business entering a new market. A great deal of research was involved in this project.

Students were excited to work with a true small startup business in the Appleton area. DiSalvo noted that “Being able to identify with the importance of entrepreneurship in the immediate community – and knowing the work being created is going to be used to assist Dalla Terra Pasta – created a sense of pride in the work developed.” The students were excited about sharing their final product, which they presented to Connolly on the last day of class.

When the students were finished presenting, Connolly reacted stating “This is great!” She was impressed with their unique ideas, especially the ideas regarding obtaining grants. She said that it was nice to hear new perspectives. Connolly is looking forward to going over the plan again. She was impressed by the depth of the project, and the detail. This project will serve as a model for future Small Business Management courses.
